Louis Boillot, formerly of Gevrey and now based in Chambolle, combines his talents with his wife, Ghislaine Barthod. Their meticulous approach to vineyard management, élevage, and cellar work results in wines of purity and ethereal beauty that gain complexity and sensuality with time in the cellar. The vineyards are ploughed and farmed using lutte raisonnée, with a rigorous berry-by-berry selection at harvest and complete destemming. Fermentations commence naturally after a brief cool pre-fermentation maceration. The wines spend two winters in up to 30% new oak and are bottled without fining or filtration. The vines are all over 50 years old, with the exceptional Cherbaudes vineyard celebrating its centenary in 2012. Louis and his son, Clément, are at the peak of their craft, producing outstanding wines that offer remarkable value.
