Located in Fontenay-Près-Chablis, Thomas and his father, Claude, cultivate their 11 hectares of Chablis vineyards on the region’s renowned Kimmeridgian soils, a rich blend of marly, chalky, clay, and limestone, all worked in perfect harmony with the surrounding environment. Although the family has been farming these vineyards since Thomas' grandfather first planted them in 1953, it was only in 2014 that Thomas made the bold decision to stop selling his grapes to the large La Chablisienne co-op, choosing instead to establish his own domaine. With an average vine age of over 30 years, the estate practices sustainable viticulture, completely free from herbicides and insecticides. The soils are regularly ploughed to maintain vitality and ensure proper aeration, fostering a thriving ecosystem within the vineyards.
For aging, Thomas opts primarily for stainless steel, ensuring the purity and crispness of the fruit shines through, while small amounts of barrel aging are used for the 1er and Grand Cru wines. Fermentation is entirely natural, and a portion of the fine lees is retained to enrich the wines, adding depth and complexity to their already vibrant character. The result is a collection of wines that exemplify the classic Chablis style - elegant, mineral-driven, and pure—offering a definitive expression of the region’s unique terroir. Each bottle reflects a true sense of place, capturing the essence of Chablis with remarkable precision and authenticity.
