Founded in 1978, this boutique domaine has been lovingly overseen by Thierry Laffay since its inception. As the 2023 vintage marks the final year of Thierry’s stewardship, his daughters, Mailys and Mélanie, are now at the helm, continuing the family tradition with a commitment to quality and sustainability. The Laffay family cultivates seven hectares of vineyards spread across seven esteemed appellations, with a focus on organic practices. Their approach to viticulture is grounded in lutte raisonnée, a method of reasoned cultivation that avoids systemic treatments and intervenes only when necessary to combat major disease risks. The average age of the vines ranges from 40 to 50 years, and all grapes are hand-harvested to ensure the utmost care and quality.

Fermentations begin with indigenous yeasts, a natural process that respects the purity of the fruit. The wines are aged for a minimum of nine months in stainless steel or enamel-lined steel vats, with just three small vats used for this delicate maturation. After alcoholic fermentation, the wines remain on their lees, undergoing malolactic fermentation to further enhance complexity and depth. Laffay’s wines are a true reflection of their terroir, crafted with minimal intervention to allow the land’s character to shine through. Their wines are a striking embodiment of the classic Chablis style - tight, rocky, steely - evoking a sense of timeless elegance and finesse, reminiscent of the legendary wines of Vincent Dauvissat.
